    CREAM OF PUMPKIN SOUP (by Judith Afonso Martín)

    Ingredients:
     400 grams of yellow pumpkin
     200 grams of single cream or fresh cheese
     200 grams of potatoes
     A half litre of mineral water
     A little salt and pepper

    Preparation:
     First, cut the pumpkin and potatoes in some pieces.
     Second, boil them with the mineral water.
     Third, mix all ingredients and add the single cream or fresh cheese.
     Finally, season with salt and pepper if you taste.

  4. Recipe for Spaghetti Bolognese (by Sara Arencibia García)

    Ingredients for four people:

    - Two olive oil spoons
    - 1/2 chopped onion
    - 2 cloves of chopped garlic
    - 1 diced carrot
    - 300 gr. of spaghetti
    - 70 gr. of red wine
    - Salt
    - 1 bay leave
    - Marjoram
    - Basil
    - 300 gr. of ground beef
    - 400 gr. of tomato sauce
    - Water

    Directions:

    First heat the olive oil over medium heat in a frying pan, then add the garlic, the onion and fry it until begins tender. Add the carrot an cook for five minutes.
    Now add the meat and mix all well again for five minutes. It's the moment to add the wine and turn the heat up until the alcohol evaporates.
    Then add the tomato sauce, the salt, the spices and cook for 30 minutes removing all from time to time.

    Add the spaghetti into a pan of boiling and salt water and cook it for 10 minutes. Then drain it and mix with the bolognese sauce.

    Serve with sprinkled Parmesan cheese.

    Recipe for tuna croquettes (by Carmen Delia Armero hidalgo):

    Ingredientes:
    - A piece of tuna
    - A large onion
    - 1 egg
    - 4 tablespoon of flour
    - Half a lemon
    - Parsley
    - Salt
    - Nutmeg
    - breadcrums
    - Olive oil
    - 1/4 l. of milk


    Preparation:
    1.- Fry the tuna.
    2.- Slice and fry a large onion.
    3,- In a bowl, mix the tuna, the onion, chopped parsley, lemon juice and nutmeg.
    4.- Make a bechamel. Mix the butter, the flour and the milk and cook to make a dough.
    5.- Mix all ingredients and add salt (the ingredients of the bowl and the bechamel).
    6.- When the dough cools you make the shape. Then you breading and fry the croquettes.

    I hope you like it! Is the recipe from my grandmother.

  6. Macaroni Salad(by Dunia Del Rosario)
    Ingredients:
    1 K. of Macaroni
    Water
    Salt
    1 Onion
    1 tin of Olives
    1 tin of Tuna
    Mayonnaise

    How to make it:
    1. Boil the macaroni in water with a little of salt.
    2.Leave to cool.
    3.Chop the onion and the olives.
    4.Mix it all in a big bowl.
    5.Add the tuna and mayonnaise.
    6.Put it in the fridge,at least for three hours.

    Enjoy the meal.

    Sorry. I made a mistake. I left my recipe in a wrong section. So, here yuo are my "fantastic" recipe again.
    My recipe: Watercress soup (a typical Canary dish), by J. Tanausú.

    INGREDIENTS (for four portions, approximately):

    -Watercress, “obviously” (a big bunch).
    -Beans (a generous handful, which you must keep it in water since the day before; however, this is not necessary if you get fresh beans).
    -Onion (a large one).
    -Tomato (a large and well ripe one).
    -Garlic (1 or 2 cloves).
    -Potatoes (2 large pieces).
    -Olive oil.
    -Cumin.
    -Saffron.
    -Sea salt.
    -Bacon or pork fat (this is up to you, because I prefer made it just with vegetables).
    -And water, “obviously too”.

    DIRECTIONS:

    Put a generous dash of olive oil into the pot (and bacon cut it into pieces, if you like it). Dice the onion and tomato and add them. Peel one potato (do not dice it) and add it. Chop the watercress and add them. Add the beans as well, and add enough water to cover everything. Then start cooking.
    Now crush the cloves of garlic, with the salt (over one teaspoonful) and a little bit of cumin and saffron; using for example a mortar. Add this to the pot. Keep cooking at least (since start boiling), for one more hour over a medium heat.
    Finally, take out the already boiled potato, squash it and keep it inside the pot. Peel and dice another potato and add together with some saffron. Cook for ten more minutes.
    By the way, don’t worry if your guests are late, because the soup gets better when the pot has been taken off from the heating several minutes, even hours, before. Some more advice: serve the watercress soup going with any delicious Canary cheese made from goat milk. Enjoy your meal !!!!!!!!!!!!!!!!!
